you would get better tone with a deeper picking technique, using rest stroke rather than the alternating picking. gypsy guitars are meant to be picked hard, IMHO.
the pickup system sounds ok but there is no way to tell because the microphone that you recorded with is filtering out the true sound. you should get advice from someone who is standing there listening to you "live".
