What's a gypsy setup?

What exactly is a gypsy setup? I am curious to know as some shop charge while some do not charge for such a setup? Thanks in advance. :)

Every shop I know if charges for set ups of any kind. When I set up a gypsy guitar:

Fit Bridge (existing bridge will be examined and adjustments will be made if there is a need - having a custom bridge made is recommended.)
Set bridge action (When a custom bridge is made the action is set at 3mm at the 12 fret)
    Set zero fret action
Set intonation (best that can be achieved using existing bridge)
    Truss adjustment
Check / clean frets (remove small burs and buffing compound from factory)
    Lube / Clean tuners
Replace strings (the price of the strings will be added if the strings must be changed)
Check tail piece (fix buzzing if any)
Fully inspection for any structural and finish flaws
Inspect and fix case (loose interior material & exterior flaws)

    Cheers,
    Josh
