Hey there! For learning gypsy jazz, strings/pick, etc don't really matter. A thicker pick can potentially can help you with the la pompe feel and faster runs, but again isn't necessary to learn the style.
If you really want to nail the sound though, look at getting a cheap gypsy jazz guitar like a Gitane or Cigano beginner (if your budget is low). Outfit that with some Argentines or really any gypsy jazz string from this site. And lastly settle on a pick you like. I tried a few and personally prefer the Guzz picks. -- again all of this stuff is more about getting the sound, but learning doesn't require it. I sometimes play gypsy stuff on my Martin OOOO-18 when it's all I've got. What really matters is getting the la pompe down tight and then working on your gypsy picking and learning the chord shapes and arpeggios and stuff like that.
Also just to note, the Argentine strings I use feel super silky and light, so light strings aren't going to hurt you at all with this style
