I recently downsized from guitar to mandolin (age related decision) and @adrian is right, the Don Stiernberg courses on Soundslice are terrific.
When I think of mandolin and gypsy swing, I can't help but think of Harmonious Wail from Wisconsin. Sims is a great player and he learned from Jethro Burns. I'm pretty sure he gives lessons too if you were to contact him.

As to Don Stiernberg, I really enjoyed the album he put together with Greg Ruby recently. Definitely worth a listen if you want to hear more of that mando sound.
