Like he said. But yes, take your time getting everything set up right before worrying about the end pieces. They are only decorative anyway and you can still play the guitar without them, not all the old GJ guitars had them anyway; both my Di Mauros for instance. Then if you do fit them double sided tape is probably better than glue if only because you could later remove them if you wanted without damaging the finish.
One tip; bridge heights can vary a lot so before buying a replacement measure the height of the strings from the body of the guitar so you know you are in the ballpark, give or take a millimetre. Then you can make small adjustments either by sanding a little off the base or shimming for height. Where care is needed here is filing the notches for the strings which ideally need to match the individual string radius and about half that for depth, and these will also determine the string spacing. Small details but critical to the setup.

I have no experience here, but it seems to me I've heard of double-sided tape being used before to stick on the moustache ends? Yes? No?

Fitting the bottom to the bridge to the top is the more difficult part -- take a look at this:
the Gentleman who build my guitar recommend me to leave 1mm space between the bridge and the Moustaches.
