From my understanding, that bit of wood helps keep the tailpiece from resonating - a shared purpose with the leather lining.
Did Gitane start rounding the end of their headstocks or is that exclusive of Vandora? It almost gives me Ovation vibes.
As far as I can compare, with pictures of a D500, the headstock is the same.
Finally I didn't replace the tailpiece. The one I received, which is like the Saga one, seemed to me of a very low quality, a very thin metal piece that I don't like, so I have left the one that came with it and maybe someday I will look for one of higher quality.
What is necessary is the adjustment of the bridge, as Buco pointed out. The one it comes with is too low, the string height is 1.5mm at the 12th fret. I have ordered a rosewood one, but at the moment I'm adjusting the height with some pieces of wood and at 2.3mm I think it's optimal. I have the impression that a higher action puts too much tension on the strings and compresses the top too much and makes the sound a bit dead to my ears.

On second look, the D500 headstocks appear to be rounder than the rest of the Gitane models. I used to routinely play with a friend that has one and I never noticed it.

Yes absolutely! I filed that down (maybe I took about 2mm off the top) on my Gitane 270 before fitting a new Killy Nonis tailpiece. Here it is now -
