Not a huge number of options that I'm aware of, but I would suggest giving Mak's Guitars in Rathbone Place, London a try. Formerly Ivor Mairants, Mak has kept the vibe alive and is one of the good guys in my experience. Very few places really prioritising or even understanding jazz guitars.
ATB in Cheltenham sometimes get gypsy jazz guitars and they will part-ex decent guitars.
