It's a fair question to ask, it shows curiosity. Hopefully it puts a person on the path. I'm sure I asked the question in some shape or form myself. Actually I know I still do when I get frustrated sometimes. But outside of that, I don't care how long anything takes, it's the process I'm enjoying. And the more progress I see, the more I enjoy the process.
I like input goals and output goals. I like to separate that kind of stuff into goals and expectations buckets. Expectations is what I can control; put on the fresh set of strings, tune up the guitar, learn the chord chart, make sure chord changes are clear, work on the good groove and pocket in my rhythm, play melody cleanly, look for ways to navigate from C-/F7 to D-/G7 and look for ways to connect the two...etc... and all the stuff you mentioned in the video.
Sure, a goal can be to play a big name festival. Everybody needs a carrot to chase. But if you keep the expectations as something you can always have a control of, you will never have a disappointment. And you can always keep working towards and moving closer to your goal by fulfilling those expectations.
