ok...what would i have to do convert my guild mediera into a gypsy guitar (aside from taking apart completely and recycling the wood)? Is there a way to pop the bridge out so I can put on a floating bridge? and tail piece? would it sound a lot different?

They have arched parallel braces so it is a lot more than the bridge.

Can I ask why you want to do this? It seems that with all the work and expense involved, you'd do much better to play the Guild while saving for a 'gypsy' guitar (you can get decent ones for under $500)...even if you change the bridge, the tailpiece, the strings, etc., it's still, in the end, a guitar that's built for something else, and chances are it'll still sound that way. If you're just doing it as an experiment, by all means, go for it, but if this is your only guitar and you're hoping to turn it into something it's not, I think you're going to be really disappointed.

At Caramoor on Saturday night, Dorado was playing an OM cutaway with on-board electronics. It looked like a Taylor, except for the headstock, which looked more like a Takamine. I couldn't really tell, I wasn't sitting that close. In any event he sounded just fine (if, ironically, a little under mixed) playing a non-selmac style guitar.

Not too surprising - Dorado would still sound like Dorado if he were playing a Silvertone. Conversely, hand me Dorado's Castellucia and I can make it sound like pure crap.
