Does a Gitane DG320 (14f d-hole) sound like a D500 (12f d)

No...not really. Other then the d hole, they are very different guitars. The DG-320 is long scale (670mm), 14 fret neck, with more neck angle etc. It's much better for lead work because it's high end will project more.

The D-500 has the extra wide 2" nut, short scale (650mm), 12 fret neck. Much more bass heavy with less high end snap.

Mike I have played the DG-340 and it sounds good relative to that "selmery" type sound from oval hole guitars. Would you say that the DG320 is comparable to other D-holes (like say a 14f Dell Arte), or does it have more of a unique sound?

Generally a US made Dell Arte is superior in tone, playability, and volume to a Saga. But each individual guitar is different so it really depends what model you're talking about. The US made Dell Arte Hommage is hard to beat...loads of volume with a traditional Favino type tone. Best value IMO.

The DG-320 is one of the best under $2000.

But you can do better if you can spend more. A Dupont or Dell arte will outperform it. The Sagas usually sound too bass heavy and wet compared to the drier, brighter sound of a Dupont or Dell Arte.
