I am beginner too...but, if i'm in your stead, i choose to learn first more books like Gypsy Picking by Michael Horrowitz...Gypsy Rythm, Intro into Gypsy Jazz or more like that, and after a teacher to know something theory and technique.
I believe Serge would teach you anyway, you might want to contact Mathieu Chatlain, Richard Chiche (used to play with Krief) or other good rhythm player to get going.
BTW Sammy Dausat is a good suggestion too.
When you get to Paris go to a few concerts and jams and talk with the players.

Do you guys know how can find Daussat, Chiche's and Chatelain's info?
Daussat has a Myspace page with an email there that seems to be for bookings only...

For Mathieu and Sammy your best bet is to go to one of their gigs and ask personally. Mathieu plays most mondays at la Taverne de Cluny and I'm pretty sure Daussat hosts a weekly jam somewhere around Montmartre, maybe the Blue note (?)
Another teacher could be Pierre "kamlo" Barre...
