Rosewood vs. Ebony bridge

......It seem that the largest majority of gypsy jazz guitars use rosewood bridges. What characteristics of a gypsy guitar; such as body dimensions, sound board thickness, bridge height, bridge placement relationship to high spot of sound board, etc. would suggest an ebony bridge? Or is the answer purely due to tonal quality and projection?

......ps: This late 70's Gitane D-500 I acquired has nice woody, thumpy tone, but is bass heavy, so am asking this question.
