for soloing over G B7 Em, i do just that... play my G ideas then my B7 Em ideas... i'm not exactly sure what could be troubling you... i suggest you either listen to a player you like and see what he does... or write a few ideas yourself... just be aware, you don't always have to play perfectly... in other words, it doesn't matter if your licks overlap a little bit over some of the chords... ie u can start the B7 idea just before B7 chord (as an anticipation), and your B7 idea can also slightly extend over the Em chord... etc...
for the last part... you have lots of choices , u can just think:
E7x1
Am x 2
D7 x 2 (it would be more correct to think D7b9)
or you can also choose to truly outline each chords... which is not very common in the style... at any rate music is very flexible and would-be soloists shouldn't be confined to any particular rule...
