The best I think is Samy Daussat's remasters.
FWIW he is also doing the Rome sessions currently (not finished yet)

For the 30's recordings you can't go wrong with "The Complete Django Reinhardt And Quintet Of The Hot Club Of France Swing/HMV Sessions 1936-1948" by Mosaic (2000). https://www.allmusic.com/album/the-complete-django-reinhardt-quintet-of-the-hot-club-of-france-swing-hmv-sessions-mw0000964556
I found "Speevey" to have very little surface noise, probably one of the highest fidelity 30s recordings.
All of the Bayard remasters has been good enough for my ears.
Do you have to order these direct from Bayard/Quest or does anyone have a link to another option?
Are they only the 1949 tracks?
I got the 8 disc set from French Amazon:
